New season, new menu!
Summertime is coming folks and watch Kendal turn into a tropical paradise. The sun WILL shine, bbq's WILL happen and we WILL need factor 50 everyday.

And to compliment this glorious season, we have some of our favourite summertime recipes that are low on calories but full of flavour!
But let's use the best bits that summer has to offer. Think seasonal and for us here in the UK, our top summer fruits and vegetables are:
Rocket and Lettuce
So here we are, our top summer go to recipes, starting with an obvious....
The Salads and Sides
1 pointed cabbage, 2 carrots, thumb size of ginger, 6radishes, 2cloves garlic, 1 pack of tendersteam broccoli, 1 pack of asparagus, 2 cups of peas, 2 sping onions, handful of mint leaves, 4tbsp olive oil, 1 tbsp djon mustard and 1 juice of a lemon.
Chuck cabbage, carrot, ginger, radishes and garlic in a blender. Shred it!
Steam some tender-steam broccoli and asparagus and chop in half.
Boil up some peas and chop up some spring onions.
Chuck in a bowl and add a sprinkle of mint
Mix up Olive oil, dijon mustard and lemon juice and drizzle over.
Homemade Hummus and dippables
1 can of chickpeas, 2-3cloves of garlic (I like a lot!), 3tbsp of tahini (or peanut butter..yes it works!), Olive Oil, 1 lemon and salt. (You can add roasted chilli, caramelised onion or roasted peppers for extra flavours)
Literally chuck all of the above in a blender. Whizz until smooth. The end.
You can dip carrots, peppers, celery, roasted sweet potato, kale crisps and bread sticks in for a delicious starter.
The Main Event
This one is for the veggies. If you're not veggie, I implore you to try these burgers. It's the best burger I've EVER had.
1 Beyond Meat Pattie, 1 bun of choice (toasted always), 1/2 avocado, 1/2 red onion, 2tbsp Mayo, 1tbsp Djon Mustard, 1tbsp brown sugar, slab of your favourite cheese.
Finely chop red onion and let it sweat with 1 tbsp of brown sugar and salt for 10mins in a frying pan.
Scoop out half of your avocado and mash with salt and pepper (chilli flakes for extra hit!)
Mix up you mustard and mayo.
Grill your burger.
Toast Your Bun.
ASSEMBLE! Bun, mayo, burger topped with cheese, add smashed avo and your caramelised onions.
A Summertime Breakfast Smoothie
When it's hot out, you may not want to start the day with a porridge. So here's my go to filling and healthy smoothie.
30g scoop of chocolate protein powder, 1 cup oats, 1 cup frozen berries, 3cups milk (I use oat but which ever you prefer.) You can also add mango, peach or plum for a summer flavour.
Literally put it all in a blender and whizz. Add milk to loosen if you'd rather it drinkable. Like it like an ice cream, add more frozen berries!
Cocktails are full of calories. A cosmopolitan has roughly 200calories, so if you have 3 of them you basically eating 3 medium sized doughnuts. *Faints*
But never fear, I've got some lower cal summertime cocktails that hit the spot.
Skinny Marg (93cals)
1 lime, equal parts tequila and orange juice (60ml of each)
You can mix and serve over ice OR blender it with ice.
Fresh Mojito (roughly 100cals)
Bunch of Mint, crushed ice, 60ml rum, 1 lime and soda water
Mix crushed ice, chopped and bashed mint and rum
Poor over ice in a tall glass and top with soda water to taste
Skinny 75 (roughly 100cals)
Campagne, 30ml gin and Lemon
Squeeze 1/2 lemon to gin and give a good mix up. Top with champagne and a lemon twirl. Classy.
Switch Your Regular Beer for A Low or No Alcohol
Ok not an alcohol one but just consider that a pint of IPA roughly has 170-240 calories. OR a can of Big Drop Pine Pale Ale 0.0% has 61 calories so you could have roughly 4 of them instead......
So even if our summer turns out to be a wash out, we've still yummy food and drink to consume. Let's face it..that's the best bit about summer anyway.
